Recipe of the Month: Almond Mushroom Pate

Ingredients:
  • 1 cup chopped almonds 
  • 1/4 butter (or substitute) 
  • 1 small onion, chopped 
  • 1 clove garlic, minced 
  • 3/4 lbs mushrooms 
  • 3/4 tsp salt 
  • 1/2 tsp thyme 
  • 1/8 tsp white pepper 
  • 2 T olive oil
Directions: 
  1. Toast almonds at 350 degrees for about 8 minutes. 
  2. Melt butter in frying pan (med heat) add onion, garlic, mushrooms, salt, thyme and pepper. Cook until soft. 
  3. Put all ingredients in food processor and mix. Chill for at least an hour before serving.
