18 – Using natural antimicrobials to enhance the safety and quality of poultry
Abstract
Naturally
occurring antimicrobials can be obtained from a variety of sources and
may range from acids such as acetic and lactic to essential oils derived
from spices. Biological methods such as bacteriocins and bacteriophages
can also be used in this manner because of their natural derivation.
Such products have the potential to be applied at various stages
throughout the poultry production continuum (pre- and post-slaughter).
